sakkarai pongal (sweet pongal)


Ingredients:
2 cups-broken wheat(samba ravai)
2 cups-jaggary
1 cup-ghee
6nos.-cardamom(powdered)
12nos-cashewnuts(fried in ghee)

method:
1. Dry roast samba rava, add 6cups of water & pressure cook.
2. Keep jaggary in a medium frying pan & add one cup of water,boil;when it melts,strain it through a filter to remove the dirts.
3. Replace through a filter to remove the dirt.
4. Replace & boil again when it becomes slightly thick add the cooked samba rava;stair continously still it becomes thick start adding ghe now & then stair it continously.
5. When it starts leaving the sides of the pan &the ghee start oozing out put powdered cardamom & stair well then add cashewnut fried in ghee & serve with love.

veg briyani:

ingredients:
Basmathi Rice- 1 1/2 cup
FrenchBeans - 1/2 cup(cut length wise)
Carrot - 2 medium sized(cut length wise)
Potato - 1 (cut length wise)
Green Peas - 1/4 cup
Onion - 2 medium sized(cut length wise)
Curd - 1 Tbsp
Redchillipowder - 1 tbsp
Turmeric powder - 1/2tsp
Saunf- 1/4tsp
Black Cardamom - 2
Clove-2
Bay leaf -2
Lemon Juice - 1 1/2 tsp
Oil- 3Tbsp
Ghee - 1 tsp

For Grinding:-

Coconut -2 Tbsp
Green chillies - 8-10
Saunf- 1/2 tsp
Cinnamon -1"
GreenElachi - 1
Ginger -
Garlic - 15 pods

method:
1. Wash and soak the Basmati Rice for 15mts.Then fry the rice with little ghee and keep it aside.

2. Grind to a smooth paste of all the ingrediants for grinding.

3. Heat Oil and Ghee in a pressure cooker, add the saunf, black elachi, bay leaf, clove and allow it to crakcle

4. Then add the onions and fry till the they turn pink.Then add the cut and washed vegetables and saute for 2 minutes

5. Add the Grinded masala and fry till the raw smell goes.

6. Then add the curd along with Redchilliepowder,turmeric powder and salt and saute for sometime.

7. Add the rice and mix well. Then add 2 3/4 cup of water, lemon juice and pressure cook the biriyani for 2 whistles(dont keep it for more than 2 whistles as the rice will become mushy)

Serve hot with Onion Raita

baji:

ingredients:
1.1/2 cup-Gram Flour(besan)
2.1 spoon-cornflour
3.1 tsp.turmeric powder
4.1/2tsp.red chili powder
5.onion (sliced)
6.salt(as required)
7.oil for frying

method:
1.mix Gram Flour,cornflour,turmeric powder,
red chili powder,salt,with some amount of
water and keep it aside.

2.dip the sliced onion in the paste&deep fry
them until golden brown in medium flame.

3.your spicy onion baji is prepared.......
you can also taste this with some sauce or chutney..............

you can also try the same with potato,brinjal,carrot,bread etc,.

bakora:

Ingredients:
1 cabbage(Finely Chopped)
1 onion (Finely Chopped)
2 pods garlic (chopped)
1/2 cup Gram Flour (besan)
1 tsp.turmeric powder
1/2tsp.red chili powder
1 green chili chopped(optional)
1 tsp. salt.
1/2 Sugar.
Oil for frying

Method:
1 Mix thoroughly chopped cabbage, chopped onion, Garlic, Besan, turmeric powder, red chili powder , salt in a bowl. If required add 1 or two tablespoon of water but avoid adding excess water as the batter should be thick and sticky.

2. Heat oil in a deep bottomed pan. Make small fritters and drop them in hot oil and deep fry them until golden brown in medium flame.

3. Drain out excess oil and keep it in a tissue paperin order to soak the excess oil.


Serve hot with Tomato chili Sauce or Green chutney.
